Should ready-to-eat vegetables be washed before service? How?
It is always a good idea to wash produce in clean drinking water before eating or serving. This goes for all produce including ready-to-eat and even items such as melons and oranges. Detergents and bleach should never be used in the cleaning process because produce items are porous and can absorb the detergent or bleach. Produce may be washed in with a vegetable wash that meets the requirements specified in 21 CFR 173.315.
