Instructor RequirementsIllinois instructor are required to take and pass the instructor training and exam provided by the State Health Department and given only in Springfield. Instructors must possess a minimum of a High School Diploma, and possess a valid State of IL Food Service Sanitation Manager's certificate. See Appendix for more details. Proctors in Illinois must work with a register, Illinois approved instructor before proctoring any exams. Code requirementMandatory. Category 1 facilities require a certified manager to be on premises at all times, catergory 2 facilities require one certified manager per facility. ( 1 & 2 = high risk having potentially hazardous food being handled. Category 3 facilities do not require a certified manager. (77 ILL. ADM. CODE 750)

Hours of Instruction15 hours training plus 1 hour for examination for initial certification; 5-hour refresher course for recertification.

Certification RenewalEvery 5 years.

MiscellaneousStudents wanting to take the Online Course as a method of training must first contact an Approved Illinois Instructor prior to starting the course. The instructor will serve as the proctor for the exam and answer questions throughout the course. Failure to do so may result in Illinois not approving the certificate.
