The National Restaurant Association is dedicated to the mission of providing the foodservice industry with relevant and timely information needed to keep food safe. With the release of the new 2009 FDA Food Code, the ServSafe manager level training and instructor materials will be updated to include several changes and new topics.

The changes in the supplement will be written into the training materials and released as the ServSafe Fifth Edition, Updated with the 2009 FDA Food Code. These updated training materials will be available for purchase based on the tentative schedule below.

Impact on ServSafe Food Protection Manager Certification Exam
The ServSafe Food Protection Manager Certification Exam tests the most up-to-date information on food safety. When changes to science occur, such as the recent FDA Food Code changes, the exam must also be updated.
The ServSafe Food Protection Manager Certification exam will soon contain pilot questions that test the new information presented in the 2009 FDA Food Code. These pilot questions do not affect an examinee's score. If the questions prove to be valid, reliable measures of examinees knowledge, then they may be present on the July 2010 examinations as scored questions.

I am an instructor, how do I use the supplement?
It is suggested that you read the changes provided in the supplement and use this language when teaching the course. The page numbers provided for ServSafe Essentials and ServSafe Coursebook are pointers which indicate where you should cover the new content within your course agenda.
I am an instructor, how do I use the updated Instructor Materials?
The PowerPoint supplements can either be dropped into your existing full version of the slides or you can see the changes that have been made and simply update your existing slides. For the practice and diagnostic tests it is suggested that you use them as soon as you are ready to teach using 2009 FDA Food Code.
I am a student, how do I use the supplement?
The supplement indicates places within ServSafe Essentials, ServSafe Coursebook or the ServSafe Manager Online Course where content has changed or new content has been added. Before you begin reading a chapter/section, look at the "Essentials" or "Coursebook" or "Manager Online" column in the supplement and see if a change is indicated for that chapter/section. For example, the supplement indicates that a change has occurred to the section Food Most Likely to Become Unsafe on page 2.4 in ServSafe Essentials, 2-5 in ServSafe Coursebook and screen 6 of 7 in the Manager Online Course. While reading this section, you should also read the section in the supplement titled The ServSafe materials will now state to find out how the content within ServSafe has been changed to address changes in the 2009 FDA Food Code.
Will there be a Sixth Edition of ServSafe Essentials and ServSafe Coursebook?
No. All the information in the 2009 FDA Food Code Supplement will be written into the textbooks and released as the ServSafe Fifth Edition, updated with 2009 FDA Food Code.
What about my existing Fifth Edition inventory, do I need to purchase the Fifth Edition Update once released?
It is your choice. You will be able to use the free supplement with your current training materials. Or, if you prefer, we will be incorporating the changes directly into the books based on the release schedule above.
Will the ServSafe Manager Online Course also have a supplement?
Yes. The Manager Online Course sections are already included in the free supplement available on this page. In addition, when the student logs in to take the manager online course there will be a link to download the free supplement directly within the online course. The student can download and print it to review as they are going through the course.
